Follalba Brut
Born between the hills of Santo Stefano, our Valdobbiadene DOCG Brut is very versatile, it could perfectly suit an aperitif between meals and aromatic risottos with a base of radicchio salad, asparagus, wild luppolo and herbs. It goes well with seafood, mostly in its lightest and most delicate versions.
TASTING NOTES
Straw-yellow color, fine and persistent bubble, creamy foam. The nose presents a good complexity, rich of fruity aromas like green apple, pear, pineapple and nectarine, followed by more floral notes like chamomile, acacia, wisteria and sage. The mouthfeel is consistent, fresh, balanced. At the end there is a hint of sweetness, well-balanced between freshness and flavor.

● Origin: Santo Stefano, Valdobbiadene
● Vineyard: Hilly position faced east and west; height 300 mt above the sea; shallow clayey-calcareous soils with marlstone presence. Double-arched cane with 3300/3500 vines per hectare
● Harvest: manual harvest during the first decade of September with manual selection of grapes
● Vinification: white vinification with monitored fermentation and maturation in cement barrels
● Refermentation: Martinotti method 11,5%vol. 7 g/l residual sugar
